Snack – Yakiimo (Baked Japanese Sweet Potato)

Ingredients:
- 2 small Japanese sweet potatoes (about 400–500 g total)
Method:
- Wash and dry sweet potatoes. Bake at 200°C for 45–60 minutes until very soft.
- Serve warm or at room temperature; split and eat with a spoon.
Prep Notes:
- Batch-bake several and refrigerate up to 4 days.
Variation Ideas:
- Japanese: Sprinkle with a few black sesame seeds.
- Korean: Mash into hot milk (or plant milk) for a simple porridge.
- Thai: Drizzle with a tiny bit of coconut milk (if tolerated).
